Kale and white bean soup

(Thanks to my gorgeous cousin, Charisse, for the recipe that got this started!)
2-3 T olive oil
4 cloves garlic, crushed or finely minced
1/2 med white onion, chopped fine
1 1/2 c kale, coarsely chopped

4 c vegetable or chicken broth
4 c water
1 can diced tomatoes (about 2 cups)
1 can white beans, drained (Cannellini or Great Northern would work well)
1 T Italian seasoning
(OR 1/2 t each of basil, marjoram, oregano, rosemary, thyme, and sage)

Salt and pepper to taste (maybe even a little crushed red pepper?)
Grated or shaved parmesan or pecorino as garnish

Put olive oil in a skillet or wok and heat gently. Add garlic and onions, and sauté for a couple minutes, until golden. Add kale and continue sautéeing for 3-5 min. Kale will turn bright green.

Put skillet mixture into a Crock Pot (on high heat) or stock pot (on med-low heat), add the remaining ingredients, and cook for about an hour. Taste for salt and pepper, top each bowl with a little cheese, and that’s it!

Serves 6 to 8, and keeps well in the freezer or refrigerator.

    The ready-made raw food snack coagetry is continuing to grow, and though I would much rather make my own, I did try some tasty kale
